After more than 10 years of ageing, the Nicolas François 2012 is showing beautifully with a really pleasant freshness, some yellow fresh fruits and citrus touch. I truly believe that the minerality is just “wow”. The small part of oak brings a touch of vivacity and depth to wine. I will choose an open glass and I’ll serve it between 10 to 12° to incense the tasting experience. Paired with this cuvée, I really like the idea of Tuna and Caviar, beautiful texture, to balance between the Pinot Noir and the Chardonnay grapes. Round and fresh that’s the balance and the delicatess of the tuna and the generosity of the caviar
The 2008 Brut Cuvée Nicolas François was disgorged during the third quarter of 2022 with less than three grams per litre. It has a delicate, pure, clean bouquet with aromas of orchard fruits, spring flowers, honey and liquorice, with hints of brioche and pastry with aeration. Medium to full-bodied, chiselled and crystalline, with racy acids and a chalky texture, the palate is tense and the finish is long, penetrating and salty. It exhibits perfect Billecart style, yet tension is present, a sign of the vintage.

Billecart-Salmon is a family-owned champagne house that has been producing exceptional champagnes since 1818. The house is known for its commitment to quality and tradition, and its champagnes are highly sought after by wine connoisseurs around the world.

The Cuvee Nicolas-Francois is named after the founder of the house, Nicolas-Francois Billecart, and is a tribute to his vision and dedication to producing the finest champagnes. This champagne is aged for at least 10 years in the cellars of the house, which gives it its unique character and depth of flavour.

This champagne is best enjoyed on its own, or paired with light and delicate dishes such as seafood, sushi, or white meat. It is also a great accompaniment to desserts such as fruit tarts or crème brûlée. Whatever the occasion, Billecart-Salmon's Cuvee Nicolas-Francois is sure to impress and delight.

The 2002 Brut Cuvée Nicolas François was disgorged in January 2015 with four grams per liter dosage, and it's showing superbly, wafting from the glass with a complex bouquet that mingles confit citrus, peach and dried papaya with nuances of iodine, brioche and honeycomb. On the palate, it's full-bodied, broad and vinous, with a rich and layered core that's underpinned by serious structure and tension, concluding with a long and precise finish. This is one of the finest wines Billecart has released in the last decade, and it is well worth seeking out.

In 1668, Dom Pérignon is said to have discovered how to make sparkling wine; today his technique is used the world over, although Champagne continues to make some of the finest. France’s most northerly wine region, Champagne is now home to 15,000 growers and 290 ‘houses’. A blend of grape varieties is usually required: white Chardonnay to add fruit and elegance, and two reds – Pinot Noir and Pinot Meunier – to provide body and backbone.
