Domaine Billaud-Simon is a renowned producer of Chablis wines, with a history dating back to the early 19th century. The estate is located in the heart of the Chablis region, in the village of Chablis itself, and is known for its exceptional terroir and commitment to traditional winemaking techniques.

One of the estate's most celebrated wines is the Montee de Tonnerre Premier Cru, which is made from Chardonnay grapes grown on a steep slope overlooking the Serein river. This wine is known for its complex aromas of citrus, white flowers, and minerals, as well as its crisp acidity and long, elegant finish.

The production process for Montee de Tonnerre is meticulous, with the grapes hand-harvested and sorted before being gently pressed and fermented in stainless steel tanks. The wine is then aged in oak barrels for up to 18 months, which adds depth and complexity to the final product.

Overall, Domaine Billaud-Simon's Montee de Tonnerre Premier Cru is a true expression of the Chablis terroir, with its minerality, freshness, and elegance. It is a wine that will age gracefully for many years, and is a must-try for any lover of Chardonnay or white Burgundy.

Notes of citrus oil, crisp green apple, fresh peach and oyster shell introduce the 2018 Chablis 1er Cru Montée de Tonnerre, a medium to full-bodied, satiny and incisive wine that's tightly wound after its recent bottling. Bottled under Diam like all of these 2018s, it will reward some bottle age.

Domaine Billaud-Simon is one of the most emblematic producers of Chablis, which expresses the richness of its wine heritage through a very expressive, unique and personal style of its wines. Domaine Billaud-Simon produces Chablis wines where the airy freshness of the mouth combines admirably with the full maturity of the fruit and the mineral terroir.

Bought in 2014 by Maison Faiveley, Domaine Billaud-Simon has retained all the spirit of this bicentennial estate.

The French Wine region of Burgundy (aka “Bourgogne”) may be small in size, but its influence is huge in the world of vino. The complexity of Burgundy can cast fear into the heart of even a seasoned wine pro, but fear not – the region need only be as complicated as you want it to be. Yes, it is home to some of the most expensive wines in the known universe, but there are also tasty and affordable wines.

Main grapes:

Pinot Noir originated in Burgundy and these vines cover 34% of the region, accounting for 29% of overall wine production. The red grape does extremely well in limestone and clay soil, which helps create their complexity. Pinot Noir wines from Burgundy range in colour from cherry to brick, are light in body, and typically have red fruit and spicy flavours. Gamay is a red grape also grown in Burgundy, but only makes up 10% of the vines.

Chardonnay is the primary grape for white wines in Burgundy, making up 48% of the vines and 68% of production. Chardonnay appreciates Burgundy’s marl soil, which gives it delicate floral, fruit, and mineral aromas and full-bodied flavours. Aligoté is the second white grape, accounting for 6% grown. {Read more about the ancient Aligoté grape in Burgundy.}

The region does produce a sparkling wine called Crémant de Bourgogne. It can be made from Chardonnay, Pinot Noir, Pinot Gris, Aligoté, Gamay, Sacy, and Melon. Varieties include blanc, blanc de blancs, blanc de noirs, and rosé.
