The Chablis comes from 48 hectares belonging to William Fevre and was cropped at just 18 hectolitres per hectare. Subtle zestiness insinuates itself on the subtle cornmeal notes of this wine's nose. More air reveals fresh green-pear peel. The palate comes in with ripeness and pervasive citrus freshness. Bright and juicy, the wine has gentle but zesty concentration and fresh resonance.
The Chablis comes from 48 hectares belonging to William Fevre and was cropped at just 18 hectolitres per hectare. It has a compact bouquet with scents of cold stone but is very tight and needs more fruit expression. The palate is well balanced with a fine seam of acidity and is quite saline in the mouth with a precise finish. Now the palate shows more potential than the aromatics, but this will come good with a year in bottle.

Very elegant bouquet, developing citrus, white-fleshed fruit and floral notes. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.

Pale yellow with greenish hues, reflecting the wine's youth and freshness.The aroma is fresh and vibrant, with bright citrus notes of lemon, lime, and green apple, combined with delicate floral aromas. A distinct flinty minerality is present, with hints of wet stone and chalk, characteristic of Chablis wines. Subtle notes of white flowers and a touch of almond or hazelnut appear as the wine opens up. The wine is crisp, refreshing, and well-structured, with clean and focused acidity. The citrus fruit flavours shine, offering a sharp, clean profile. There’s a light, almost racy minerality that adds depth and complexity, giving the wine its characteristic "Chablis" style. The mouthfeel is smooth, with a refreshing and zesty finish. The finish is clean and persistent, with lingering mineral notes and a touch of citrus, leaving a crisp and refreshing aftertaste.

The French Wine region of Burgundy (aka “Bourgogne”) may be small in size, but its influence is huge in the world of vino. The complexity of Burgundy can cast fear into the heart of even a seasoned wine pro, but fear not – the region need only be as complicated as you want it to be. Yes, it is home to some of the most expensive wines in the known universe, but there are also tasty and affordable wines.

Main grapes:

Pinot Noir originated in Burgundy and these vines cover 34% of the region, accounting for 29% of overall wine production. The red grape does extremely well in limestone and clay soil, which helps create their complexity. Pinot Noir wines from Burgundy range in colour from cherry to brick, are light in body, and typically have red fruit and spicy flavours. Gamay is a red grape also grown in Burgundy, but only makes up 10% of the vines.

Chardonnay is the primary grape for white wines in Burgundy, making up 48% of the vines and 68% of production. Chardonnay appreciates Burgundy’s marl soil, which gives it delicate floral, fruit, and mineral aromas and full-bodied flavours. Aligoté is the second white grape, accounting for 6% grown. {Read more about the ancient Aligoté grape in Burgundy.}

The region does produce a sparkling wine called Crémant de Bourgogne. It can be made from Chardonnay, Pinot Noir, Pinot Gris, Aligoté, Gamay, Sacy, and Melon. Varieties include blanc, blanc de blancs, blanc de noirs, and rosé.
