"Histoire D'A was fermented with 40% whole clusters and spent 12 months aging in barrels—now 10% first-use oak, although at one point it was 35% and aged up to 18 months. These changes have impacted all the wines from Domaine Nico's 2022 vintage, and in this one in particular. It has very low alcohol (11.8º), firm tannins, a rather vertical structure, and a pleasing crunchy sensation. Lots of ripe red and juicy fruit in a wine that's delicate and sharp at the same time. For Histoire, the selection was made from pinot noir vineyards planted in 1998 near the lowest part of the Adrianna vineyard, right next to the Lomas del Jaboncillo, at the beginning of what is known as Monasterio, one of the areas that's now producing some of the Uco Valley's reds."
The influence from the élevage is still noticeable in the 2020 Histoire d’A Pinot Noir. The wine comes from a warmer year, making it riper, with slightly higher but still moderate alcohol at 13.5%. Pinot Noir is quite sensitive to heat and presents differently in cooler and warmer years. The palate also displays abundant, grainy-textured tannins that lend a faint rusticity.

Domaine Nico is a boutique winery located in the heart of the Languedoc region in southern France. It is owned and operated by Nicolas Haeni, a young and talented winemaker who is passionate about producing high-quality, organic wines.

The winery is situated in the small village of Caux, which is known for its picturesque landscapes and rich historical heritage. The region has a long tradition of winemaking, dating back to the Roman era, and it is known for its diverse terroir and Mediterranean climate, which are ideal for growing grapes.

Nicolas Haeni took over the winery in 2014, after working in wineries all around the world, including Australia, New Zealand, and California. He is committed to sustainable and organic farming practices, and all the grapes used in his wines are hand-picked and carefully selected to ensure the highest quality.

Domaine Nico produces a range of wines, including red, white, and rosé, all made from local grape varieties such as Syrah, Grenache, and Carignan. The winery also produces a unique orange wine, made from white grapes that are left to macerate with their skins, giving the wine a beautiful amber hue and complex flavors.

One of the standout wines from Domaine Nico is the Caux Rouge, a blend of Syrah, Grenache, and Carignan. This wine is aged in oak barrels for 12 months, giving it a rich and velvety texture, with notes of red fruits, spices, and a hint of vanilla. It is a perfect representation of the terroir and winemaking style of the Languedoc region.

Another notable wine from Domaine Nico is the Les Buissonnets, a white wine made from a blend of Roussanne, Marsanne, and Grenache Blanc.
