Blanco
Blanco tequila represents the purest expression of agave distillation, produced from 100% blue agave harvested primarily in Jalisco and select regions of Mexico. By law, blanco tequila must be bottled immediately after distillation or aged for no more than 60 days in neutral containers, preserving the raw character of the cooked agave. This minimal intervention approach allows the terroir and production methods to shine through without the influence of wood aging.
The flavor profile of blanco tequila centers on bright agave notes, often displaying vegetal, herbaceous, and sometimes mineral characteristics depending on the production region and methods employed. Expect clean, crisp spirits with varying degrees of pepper, citrus, and earthy undertones. The absence of barrel aging means these tequilas showcase the distillery's approach to fermentation and distillation, from traditional tahona-crushed agave to modern roller mill extraction methods.
Mexican distilleries across different regions produce distinct expressions of blanco tequila, each reflecting their specific terroir and production philosophy. Highland tequilas from Los Altos typically offer more floral and citrus notes, while lowland expressions tend toward earthier, more mineral profiles. Notable producers range from traditional family operations like Fortaleza, which employs time-honored production methods, to modern distilleries that combine traditional agave cultivation with contemporary distillation techniques.
