Distiladora San Nicolás is a Mexican distillery operating under the Tequila Denominación de Origen, which legally restricts production to specific states in Mexico — primarily Jalisco, along with parts of Guanajuato, Michoacán, Nayarit, and Tamaulipas. The distillery produces the Espolón brand of tequila, a line aimed at delivering accessible, approachable expressions of the spirit.

Espolón is produced using blue agave (Agave tequilana Weber), the only variety permitted in tequila production. The range includes Blanco, an unaged expression that goes directly to bottle after distillation and reflects the raw, herbaceous character of the agave, and Reposado, which is aged in oak barrels for a minimum of two months, introducing softer vanilla and caramel notes while retaining the agave's fundamental profile. These two categories represent the entry points of the classic tequila aging spectrum, from fresh and vegetal to lightly mellowed by wood.
